 2 tbsp Unsalted butter, melted for buttering molds
 1 cup Almond flour
 4 cups Confectioners' Sugar
 ½ cup All-purpose flour
 Salt
 ¾ cup Egg whites, room temperature (5 to 6 eggs)
 ¾ cup Unsalted butter, melted and cooled
 Raspberries, fresh

Preheat an oven to 400 degrees, and position the rack in the middle.

Thoroughly butter the financier molds. Place the mold onto a baking sheet and transfer to the freezer to solidify the butter which will make unmolding the financiers easier.

In a large bowl, whisk together the almond flour, sugar, flour and salt, and mix until thoroughly combined. Make a well in the middle, and add the egg whites and remaining butter. Using a spatula, fold the dry ingredients into the wet ingredients, outside into the middle, until thoroughly combined. The mixture will be thin and pourable.

Using a spoon, pour the batter into the prepared molds, filling them almost to the rim. Place a raspberry into the middle of each. Put the baking sheet in the middle of the oven and bake for approximately 18 minutes. The yield will be approximately 20 financiers. The outside should be golden and crunchy with the center still quite moist.Let them cool a bit before unmolding.

These little cakes are crisp on the outside, moist & nutty on the inside. Resembling a solid gold brick, they are truly addictive.
